Rigatoni, Pomegranate, Turkey and Blue Cheese-Ricotta Sauce is such a lovely way to enjoy leftover turkey or chicken works great too!

Rigatoni, Pomegranate, Turkey and Blue Cheese-Ricotta Sauce I’m a huge fan of pasta. . . any shape or size it’s all the same to me, but did you know that there are over 2000 different shapes of pasta?!  Really.  It’s quite amazing when get looking into them all! 

Rigatoni, Pomegranate, Turkey and Blue Cheese-Ricotta Sauce when it comes to sauce I’m a little more picky.  I adore all kinds of pasta sauce tomato sauce, alfredo, tomato-cream, and on and on!  But, this one came to my creative little head the other day AND I have to say it’s got some serious “wow” factor to it! 

All I can say is that Ricotta and Blue Cheese are just meant to be together once in awhile.

Rigatoni, Pomegranate, Turkey and Blue Cheese-Ricotta Sauce

Serves: 4
Ingredients
  • 1 (15 ounce) container lowfat ricotta cheese
  • 1 (8 ounce) container lowfat blue cheese, crumbled (1/4 cup reserved)
  • ¾ cup lowfat milk
  • 2 cups cooked turkey or chicken, sliced
  • 1 cup pomegranate seeds
  • ¼ cup small sprigs rosemary
  • reserved blue cheese crumbles, to garnish
  • 4 servings rigatoni pasta, prepared to package directions
Instructions
  1. In a sauce pan over medium low heat combine ricotta, blue cheese, and milk; bring to just a simmer.
  2. Cook and stir for 2 minutes or until blue cheese is melted into sauce.
  3. To serve evenly divide: cooked noodles, sauce, turkey onto four serving plates.
  4. Sprinkle with blue cheese, pomegranate seeds, and rosemary sprigs.
  5. Serve and Enjoy!

Miss Nichole from Pure Clean Fitness is here to hang out with us. I love having her visit and inspire our fitness! A Healthy Recipe- Turkey, Pomegranate, and Ricotta Salad with Cranberry Vinaigrette from me +  a Healthy Gift Ideas from Nichole = a healthy, happy, and balanced life!

Turkey, Pomegranate, and Ricotta Salad with Cranberry Vinaigrette is a scrumptious salad that you can put together in a few minutes for your friends and family to enjoy this Christmas season! This is the easy delicious after Christmas dinner meal that everyone will enjoy!

Turkey, Pomegranate, and Ricotta Salad with Cranberry Vinaigrette is perfectly crunchy and wonderfully flavored! We love the texture that the pomegranate and walnuts add to this salad!!  You may also enjoy our Baked Goat Cheese, Pomegranate, Orange Salad with Orange Balsamic DressingHarvest Chicken Salad with Raspberry Balsamic Dressing, or Blueberry, Almond, Chicken Salad with Lemon Honey Vinaigrette!

Miss Nichole’s Healthy Gift Ideas. . . 
Christmas is almost here and the countdown is on, I should probably start wrapping some presents to put under the tree pretty soon. On top of getting presents wrapped I still have a couple people that I am clueless on, if you are in the same boat I wanted to share some fun healthy and fitness related ideas that you can give to that last minute person.

I need to give a caveat here; you need to think of the person you are giving the gift too. A fitness or health related gift doesn’t make sense for some people and can cause I lot of hurt feelings and stepped on toes. Be smart about it and think about who you are giving the gift to.

1) A race entry. This is one that I have done in the past and it is in the works for this Christmas as well. In the past it has been a race that has been asked for. This year it is also for a runner and family. This year it is a gift not only of a race but of some family time together.

2) A fruit basket. We all love those adorable and delicious treats, but think of some treats that go beyond the cookie recipes.

3) A nice water bottle. This is one of my favorite gifts to get and to give.

4) Workout clothes. We all love cute and comfy workout clothes, whether or not we actually like to workout.

5) Awesome headphones. This is another one of those gifts you love whether you workout or not. A great pair of head phones can definitely help with a perfect run or great workout, but can also be great on the plane or walking through the grocery store.

These are just a few ideas that I have loved to give and to get over the last few years. Hope you have a very Merry Christmas!!!

Ingredients
  • 2 bunches romaine lettuce
  • 1 turkey breast, sliced ¼ thick
  • 1 cup ricotta cheese
  • ¾ cup pomegranate seeds
  • ¾ cup candied walnuts, rough chopped
  • 1 rosemary sprig, rough chopped
  • Cranberry Vinaigrette:
  • ½ cup of cranberry sauce
  • ¼ cup of balsamic vinegar
  • ½ cup of half and half
  • 1 tablespoon of honey or agave
Instructions
  1. Divide romaine leaves between 4 serving plates.
  2. Evenly arrange turkey and ricotta cheese on beds of romaine leaves.
  3. Sprinkle candied walnuts and pomegranate seeds over salads.
  4. Garnish with rosemary.
  5. Cranberry Vinaigrette:
  6. Add all the ingredients into a food processor and blend until the sauce is smooth and creamy.
  7. Drizzle over salad. Store leftover dressing in the refrigerator.
  8. Enjoy!

Artichoke, Sun-dried Tomato, Hummus Salad is reminiscent of the Mediterranean cuisine, packed with flavor, and fabulously healthy! 

YAY! It’s Fit Friday!! 

Miss Nichole from Pure Clean Fitness come to hang out with us. She keeps our fitness inspired- today, she’s giving us a Winter Treadmill Workout that’ll get your heart pumping!! But, first a Artichoke, Sun-dried Tomato, Hummus Salad to fuel your workouts!  

Artichoke, Sun-dried Tomato, Hummus Salad has all of my absolute FAVORITE things in one salad! I’m obsessed with artichokes, sun-dried tomatoes, and hummus! I wish I could eat hummus for every meal– it’s just that delicious to me!

Artichoke, Sun-dried Tomato, Hummus Salad is a healthy and easy salad to throw together! I like to make a few of these ahead of time and take one to work with me for lunch! This salad reminds me a lot of some other lunches I like to take to work!! BBQ Chicken Spinach Salad is just to die for as well as Apple Cucumber Tossed Salad and Peach Cucumber Mint Salad!!

Wintertime is a great time to jump on the treadmill. The mornings are cold and dark, its a little safer and a lot warmer to head inside and jump on the treadmill. I am one of those individuals that has to get it done early, which means in the winter time I am definitely on the treadmill. Especially after last years conversation with my husband in which I agreed not to run outside by myself in the dark, not the safest thing for this klutz.

So today we are hitting the treadmill with an awesome speed workout. This is a longer one if you do all of the reps, so feel free to do less reps if you are just getting started or if you are a little short on time. This treadmill is really awesome for use at home  NordicTrack NTL17915 T 6.5 S Treadmill !! 

Run hard. Work hard.

Serves: 2
Ingredients
  • 3 cups mixed power greens
  • 1 cup artichoke hearts
  • ½ cup hummus
  • ¼ cup cooked turkey bacon, crumbled
  • ¼ cup light feta cheese, crumbled
  • 2 tablespoon olive tapenade
  • Crackers or pita bread wedges for serving
Instructions
  1. Divide greens between 2 serving plates.
  2. Divide remaining ingredients between plates, arranging in a circular pattern with hummus in the center.
  3. Serve with crackers or pita bread wedges.
  4. Enjoy!

Turkey Frank Corn Dogs are a healthy, yet still yummy, alternative to corn dogs! Your kids will never know the healthy little secrete to these corn dogs.

Turkey Frank Corn Dogs are a great meal for kids at a friend or family BBQ! They are the perfect summer time lunch. I remember playing in the back yard at my grandma’s house… being completely enveloped in the game we (the cousins and I) were all playing. Then all of the sudden grandma would yell, “Time for Lunch!” and we would all come running! Grandma always made the best lunches and those memories will forever be embedded in me.

Turkey Frank Corn Dogs will help create wonderful childhood memories for your children with this scrumptious summer time lunch! Need more fun summer time lunch ideas?? Don’t worry, we got you! Turkey Frank Corn Dogs

Serves: 12
Ingredients
  • 2 packages turkey franks
  • 2 cups pancake mix
  • 1½ cups corn meal, divided
  • 1 tablespoon dry dill
  • 1 tablespoon garlic salt
  • 1 tablespoon old bay seasoning
  • 1 ½ cups whole milk
  • 1 ½ cups water
  • ¾ cup canola oil for pan frying
Instructions
  1. Combine all dry ingredients (excluding ½ cup corn meal); mix well.
  2. Add the milk and water slowly while stirring.
  3. Add oil to a large skillet over medium high heat, bring to 350 degrees F, once hot begin frying turkey franks.
  4. Place remaining ½ cup corn meal in a mixing bowl to dredge each turkey frank, then dip in batter, and pan fry.
  5. Turning twice; cooking on all sides until golden brown.
  6. Place on paper towel lined plate.
  7. Fry in small batches so as not to overload the pan.
